Buffalo chicken, creamed spinach and avocado salsa – Recipe review

In my household, I am the barrow pusher when it comes to primal eating and my partner is pretty much ‘along for the ride’. and while I would be happy to nibble on carrion and forraged berries at every meal, I like to try to keep it interesting for her to allay the risk of straying (from the lifestyle, that is, not the relationship!)

So when she asked for a chicken dinner, I turned to Mark’s Daily Apple for recipe ideas. Enter Spicy Buffalo Chicken.
(butter, garlic, sweet paprika, vinegar, Tabasco marinade painted over chicken which is then roasted and rolled in the marinade again).

And since there is a wealth of silverbeet growing in my parents’ garden where we are currently housesitting, I sliced some off and decided to make creamed spinach as a side (I omitted the flour and milk, and instead added a slosh of cream). And for a touch of freshness – I scoured trillions of websites for the perfect avocado salsa recipe (thanks, Google!) – note, I added a few leaves of thinly sliced mint, which I also found taking over my parents’ garden. Growing your own produce is so rewarding when somebody else does it for you!

Et voila! – A delicious paleo chicken dinner!

Quick primal breakfast – poached eggs, bacon, avocado, spinach

I had a lot of meaty snacks and frittatas prepared, but I just felt like bacon this morning – a nice simple, clean breakfast. But I also wanted some greens and fats, as I’ve adjusted my carb intake and have been feeling a little low-carb fluey over the past couple of days.

Enter poached eggs, bacon, and half an avocado on a bed of baby spinach leaves, a smattering of Parmesan, and a drizzle of olive oil and balsamic. Salt and pepper and a dash of hot sauce (Tabasco is my favourite!) and breakfast is served!

Thai chili basil balls – Recipe

Today’s delicious recipe brought to you from the exquisite mind of yours truly!

Ingredients:

500g minced chicken breast
30ml Thai fish sauce
2 cloves garlic, crushed
Small handful basil leaves
One finely chopped birdseye chilli
Squirt of honey optional
Dollop coconut oil for frying

Mix all ingredients in a big bowl, then heat coconut oil in a shallow pan. Place small dollops of chicken mixture around pan, 4 – 5 at a time. Flatten into patties.

Fry until golden brown on each side and cooked through.

Add an extra chilli if you like it spicy!

Delicious with a shredded cucumber and lime juice salad, nuoc Cham dipping sauce, or on their own as a snack!

A must read for anyone into nutrition who still can’t get their head around why fat is not the determining factor in why we get fat: “What if it’s all been a big fat lie?” by Gary Taubes

Or maybe it’s this: they find that their very own dietary recommendations — eat less fat and more carbohydrates — are the cause of the rampaging epidemic of obesity in America. Or, just possibly this: they find out both of the above are true.”

Taubes went on to write a mammoth book entitled “Good calories, bad calories” that was very science-dense, so he dumbed it down into “Why we get fat and what to do about it”, which is a cracking read. Taubes himself is living proof that carb-restricted diets are the only way for people with a tendency to get fat to get lean and stay lean – forever. And part of eating primal/paleo is to limit carb intake. So – hand in hand, I say!

Two all-beef patties, no special sauce or bun – recipe review

My friend Nathan from My Backwards Walk paleo day-in-the-life-style blog was always posting about his beef patties he would chow down for breakfast. Intrigued, I asked him exactly how he prepared these patties, which he ate in all kinds of paleoriffic combos. He said: beef mince, onion, garlic, and jalapeños for some excitement.

So decided to have a go myself, to give me a good low-carb readymade snack to have on hand at all times.

We need to talk about cheating – with chocolate cake

A few times a year, for some celebratory reason or other, my grandmother makes a chocolate cake. And she happens to make the best chocolate cake in the world:

Paleo or not, there aren’t many reasons in the universe that I would not eat Grandma’s chocolate cake. However, there are many reasons TO EAT IT. Chief among these is that it is delicious. Next is that she’s 83 years old and bakes one of these bad boys every time the whole family gets together. She has to get up at 3am to do it. So, notwithstanding that I would be the family pariah if I said “I eat special” and turned it down, well, I could not conscionably turn it down anyway! Not grandma’s cake!

How much fat in a red herring? Fat mythbustin’

I’ve been thinking.

I saw a brilliant t-shirt on my twitter travels saying “Butter was framed” and I laughed. Mmmm – butter.

Butter - the only thing that makes me miss bread!

And then I was having a chat with sweatlikeapig about sugar content in ‘healthy’ snack bars and how often fat is the deciding factor in eating these bars, not the massive sugar and carb loads. And I got to thinking that fat is often a red herring when considering what foods are good and ‘not good’ for you.

More and more lately I have been reading about how saturated fat is NOT bad for you, and only superficially linked to heart disease.
